A perfect side to any meal! This is one of my favorite things to do as a side for so many of our meals, and what is even better about it is that BOTH of my toddlers scarf these down! Again, an easy side that everyone enjoys AND is good leftover heated in a skillet for breakfast, lunch or dinner?! That sounds like lots of winning in this mama’s handbook! I’ll take it!
Ingredients:
- Sweet Potatoes
- Coconut Oil
- Sea Salt or cinnamon
What To Do:
- Rinse your sweet potatoes and cut them into little chips like the picture below. I slice my potatoes thinly and then cut each slice into four pieces. Sometimes I cut them into more chunky pieces too. Obviously you can decide how big or thick you want them.
- Lay them out on a 9×13 baking pan.
- Melt 2-3 tbsp. of coconut oil into a bowl and brush across the sweet potato chips.
- Sprinkle with sea salt.
- Bake at 350 for 20-25 minutes depending on how crispy you want them to be. You could do the same thing with white potatoes, although I might use olive oil instead of coconut oil.
