This is such an easy go to meal my friends!! I am always making sausage and potatoes it seems, but I have to give my hubby all the credit with putting the bacon spin on this! I was trying to get the baby down for an evening nap and when I came out, he was soooo proud of himself because he thought about adding bacon to the sausage haha! Hey, I was proud of him too because it was delicious!
I’ve mentioned these baked potato bites before, because they are an easy side dish to so many meals and kid friendly. I also have a sweet potato version that we do often as well!
Ingredients:
- Yellow golden potatoes
- Olive oil
- Dijon mustard
- Sea salt
- Black pepper
- Nutritional yeast seasoning (got this on Amazon)
- Parsley
- Pederson Sausage links
- Pederson bacon
What to do:
- Rinse and cut up your potatoes into bite sized pieces.
- Place in a bowl and drizzle with 1-2 tsp. olive oil.
- Sprinkle the potatoes with your desired amount of spices and a couple of squirts of Dijon mustard.
- Stir the potatoes and then lay on a baking sheet lined with parchment paper.
- Bake at 425 degrees for 40ish minutes until golden brown. You could even broil them for a few minutes to make them extra crispy.
Next up is the bacon and sausage! Simply slice the sausage into rounds and place in a pan. Cut up a few bacon strips with kitchen sheers and fry them up together! Once they have completed cooking, place the sausage and bacon on a towel to drain the extra grease.
Add a side salad and you’re done! We love the Tessemae’s creamy Caesar dressing! If you’re thinking you don’t have access to Pederson and Tessemae brands, check your local Kroger and H-E-B! I’ve found that both stores have started carrying more holistic brands like these!
