You can pretty much put anything in a bowl and I will be down for it. I love rice bowls, taco bowls…the list goes on and on! I saw this dinner idea on instagram, and it was surprisingly delicious! I wish I could remember who shared the idea, because I definitely want to give credit where I can, but it was so long ago that I have no idea who it was! And P.S. – I am not a food blogger, so my pictures are not the greatest haha, so just trust me when I tell you that you need to throw this into your meal rotation!
Ingredients:
- 3-4 pack chicken breasts
- Sweet potatoes (cubed) – I grabbed a bag of pre cut ones from the produce department to save some time!
- Riced Cauliflower (I buy a bag of frozen!)
- Your choice of BBQ sauce, I used Primal Kitchen!
What to Do:
- Place chicken breasts in your crock pot and cover with water or chicken broth. Cook on low for four hours.
- Once the chicken breasts are cooked, pour off the liquid and shred your chicken in the crock pot. Add BBQ sauce and keep it covered on low. (I wouldn’t do this too early, just to keep it from drying out!)
- For the sweet potatoes, melt a little bit of coconut oil (1/4-1/3 cup) and pour it over the sweet potato bites in a bowl. Stir them and then spread a piece of parchment paper on a baking sheet, spread out your sweet potatoes. Sprinkle with sea salt or cinnamon if you want a sweeter taste. Bake for 25-30 minutes on 350 depending on how crispy you want them. Sometimes I bump the temp up to 400 and bake for less time if I am short on time!
- For the riced cauliflower, add 2-3 tbs olive oil to a skillet, pour the riced cauliflower into the pan and stir while it heats up. Once it is cooked through, sprinkle some garlic powder and mix that in. Easy!
- Once everything is cooked, grab a bowl and layer the cauli-rice, shredded chicken and sweet potatoes! Maybe top with a little extra BBQ and you’re done!
