This is a “go to” meal of mine. I make it fairly often because it is so easy and it is delicious. I realized this month that I hadn’t made a post for it, just thought I would through a quick one together to share!
For the potatoes, I use the yellow/golden potatoes that you can just cut up and don’t have to skin. Cut those up and place into a bowl, splash with olive oil, add a dollop of dijon mustard, sprinkle with parsley, nutritional yeast if you have it and sea salt and pepper. Bake at 425 for 25-30 min.
For the sausage, I grab a Pederson sausage from the store and slice it up and heat it up in the skillet. I turn the pieces over and once they are browned I set them on a paper towel to drain.
I chop up the broccoli and spray it with olive oil and maybe sea salt and place it in the oven the last ten minutes the potatoes are cooking. After 5 minutes, I reach in and toss them around, then let them bake another 5ish minutes until they are crispy.

Are you wondering what that white sauce is in the middle? It’s the best part! My cousin’s wife Ashley came up with this aioli sauce and served it with some appetizers when we visited them in Seattle! Grab a good quality mayo (say around 3/4 cup to 1 cup depending on how much sauce you want or need), squirt in some lemon juice, sprinkle with sea salt and then also add a clove or two of garlic. Whisk everything together, taste it and add more salt or lemon juice to help with consistency.
