Salmon Fish Sticks

Yep I’m a toddler. I made fish sticks this night. And they were delicious.

I feel like when we’re trying to eat Whole30 meals consistently, our biggest challenge is keeping things interesting so we don’t get bored with the same meals over and over. I love following the Whole30 instagram feed because they have so many great recipe posts each day, and that is exactly where I found this one. They featured a recipe from this blog here!

These fish sticks were super easy, and could be used on salads or tacos too!

Ingredients:

  • 1/2 lb. salmon (or your favorite fish…I actually had to use tilapia tonight because of what H-E-B had available.)
  • 1/3 cup almond flour
  • 1/3 cup coconut flour (Ordered a big bag of this from Amazon!)
  • 1/3 cup nutritional yeast (I got this from Amazon too, but Trader Joe’s and Whole Foods supposedly carry it.)
  • 1/2 tsp. sea salt, plus more for finishing
  • 1/2 tsp. black pepper
  • 1 egg
  • I want to add some other seasonings to this…maybe garlic powder or paprika next time, I feel like it was just missing something…so if I do I will update it in the future!
  • 1 tbsp. coconut milk (I used almond milk because it was what I had on hand)
  • avocado oil for drizzling
  • dipping sauce if you like! We loved them in Dijon Mustard (W30 approved) and Tessa Mae’s Ranch dressing!

What To Do:

  1. Preheat the oven to 450 degrees and line a baking sheet with parchment paper.
  2. Combine the almond flour, coconut flour, nutritional yeast, sea salt and pepper in a bowl.
  3. Whisk the egg and coconut or almond milk in a separate bowl.
  4. Slice your fish into strips.
  5. Dip the pieces of fish into the egg and then into the flour mixture to coat the fish.
  6. Drizzle lightly with avocado oil.
  7. Bake in the oven for 12 minutes and then broil for an additional 3 minutes.
  8. Serve with a side salad, sweet potatoes or your choice of veggies!
I feel like there’s a seal at Sea World that would be really excited to eat this haha…

This was great left over too…I just put a little oil in a frying pan and reheated these little guys that way. I almost preferred them that way hah!
