Rachel’s Homemade Salsa

This is Rachel. She makes awesome homemade salsa.

Rachel is also one of the sweetest people I have ever met in my life, and she has a wonderful, amazingly talented and smart little family. She had me over in her home so much during my time at A&M and was such a mentor to me. She taught me so much about being a mom, showing hospitality and just running a home efficiently. I will always remember those days I spent with her, playing with her kiddos and eating her yummy salsa with our lunch.

So with all this Whole30 talk I have going on throughout my blog, I thought HEY! I need to share Rachel’s salsa recipe because it is DELICIOUS and EASY and just a nice addition to a lot of meals. When I had my garden at our first house, I had most of these ingredients at my finger tips! I keep telling Jacob I want to start one here but he’s like not really wanting me to mess up the grass even though we have two kids (specifically boys – yes that makes a difference) and a dog who’s daily goal is to destroy anything in their path (esp. the backyard) so we’ll see how long he holds out on me. 😉

Ingredients:

  • 1 yellow onion
  • 10-12 roma tomatoes
  • 1 bunch of cilantro
  • 2-3 jalapeños (Smaller ones tend to be spicier! Choose wisely haha!)
  • lime or lemon juice
  • 2 – 8 oz. cans of tomato sauce
  • 1-2 garlic cloves (or more if you like a lot of garlic!)
  • Salt to taste (probably between 1-2 tsp., maybe more if you prefer)

What to do:

  1. Divide your ingredients in half.
  2. Add half of all of the ingredients to your blender or food processor and blend until desired consistency. I like my salsa to be a little chunky so I don’t do it for a super long time.
  3. Pour out your first batch and repeat! You may want to taste your salsa before you pour it out just to make sure you put enough salt or lime juice etc.
  4. Usually what I will do is use the first batch and freeze the second batch. I can’t go through all of this before it goes bad (it makes a lot!) so I put the second half in a gallon ziplock bag and freeze it. It’s not quite as fresh as the first batch but it’s not bad either. 🙂 You could also easily just buy half of the ingredients and just have some leftover onion and cilantro. Hope you enjoy!
