Pork Carnitas

This is one of our favorite recipes! I have been making this for a while, pre-whole30 days, so I honestly cannot remember where I found it! Best bet would be from Pinterest, but who knows at this point! Again, another pretty easy recipe to put together! I don’t know about you, but I feel super accomplished when I get dinner going in the crock pot in the morning and then have minimal prep before dinner haha!

I love putting this meal together on a Saturday evening, and then eating it for lunch on Sunday after church. I don’t know about you, but Sunday lunch after worship and Friday evenings are the best times for Mexican food!

Ingredients:

  • Pork Carnitas
  • 1 tbsp. oregano
  • 2 tsp. ground cumin
  • 1 tbsp. Olive oil
  • yellow onion
  • 1 jalapeno
  • 1-2 garlic cloves
  • 2 oranges or 3-4 mandarin oranges
  • sea salt

What To Do:

  1. Rinse and dry pork, place in crock pot
  2. Mix oregano, cumin and olive oil in a little bowl and rub onto pork.
  3. Top with sliced onion, sliced jalapeño and minced garlic.
  4. Squeeze oranges over the pork.
  5. Cook on low 8-10 hours.
  6. Once it has finished cooking, remove pork from the crock pot and shred it.
  7. Heat 1 tbsp. of olive oil in a large skillet and place the pork in the pan. (Don’t skip this part! It kind of gives the edges of your pork a crunchy feel!)
  8. Spread it out and press it down so one side gets a little crunchy. Pour a little of the juices from the slow cooker on top and top with sea salt.
  9. Serve on top of plantain chips or pantacones, and top with salsa and guacamole! YUM!
