This is how I feel about my plantain rice…
Can’t stop, won’t stop. Just keep making it 27 times in a row and pushing it into different t meals haha!
Tonight I made your basic taco meat, and put it together with the plantain rice to make some taco rice bowls.

So for your taco meat…brown 1-2 lb. of ground and drain the fat if needed, then add your taco seasoning and a little salsa. I used to add water and heat it all together, but I like adding some jarred salsa instead. Probably about 1/2 a cup. I make the seasoning mix ahead of time and store it in a mason jar, just scooping out what I need until it’s seasoned enough.
Taco Seasoning:
- 1/2 cup chili powder
- 1/4 cup onion powder
- 1/8 cup ground cumin
- 1 tbsp.garlic powder
- 1 tbsp. paprika
- 1 tbsp. sea salt
While the meat was cooking, I also worked on the plantain rice, and grilling some chopped red bell peppers in another pan. Made some guacamole and then piled it high in a bowl.
