I love cooking and baking with my boys… I have such fond memories of making things with my mom and that is something I’ve just wanted to pass onto them. Aaaand I’m also hoping they can impress their future wives with their skills one day too hah!
Jackson helped me make this meal. That’s how easy it was. He helped me add everything together and give it a big stir. I love meals like this, not a lot of pots and pans required, easy and yummy. Oh and good leftover too!!!
We’ve started finally having lots of rainy days and cooler weather sliding in, that I have been craving chili non stop! So I looked on trusty Pinterest for an easy chili recipe and this one definitely hit the spot!
Ok, I’ve made you wait long enough hehe! Here’s the FOOD! YUM!
Ingredients:
- 2 lb. ground meat
- 1 yellow onion, diced
- 4 tbsp. tomato paste
- 3 tbsp. chili powder
- 1 tbsp. cumin
- 2 cup organic chicken broth
- 28 oz. fire-roasted tomatoes (undrained)
- 1 tsp. sea salt
- 1/2 tsp. black pepper
- (Some other spices I’m going to play around with include cumin, garlic powder, and oregano…so I will adjust this in the future if it helps!)
What to do:
- Brown the ground meat, breaking it up into smaller pieces.
- Dice the yellow onion and add to the meat, cook for a few minutes until translucent.
- Add the tomato paste, chili powder, garlic powder and cumin, stirring well over medium heat.
- Add the chicken broth and allow to cook for a few more minutes.
- Add the fire roasted tomatoes and mix everything well.
- Season with sea salt and pepper.
- Simmer uncovered for 45 minutes, serve over rice or in our case, plantain rice!
You could easily double this recipe and freeze half. I haven’t done that yet but I would imagine it would work out!
Now one more thing before I go…. y’all… PLANTAIN RICE.
