My sister-in-law, Madeline, and I swap recipes here and there, and she sent me this one last week! She is a great cook, she always has good suggestions!
This Bacon Wrapped Chicken from the Dinner at the Zoo blog was SO delicious and So easy! Good leftover too, so I think that checks all of our boxes haha! I wanted to highlight it here so it would be easy for me to refer to later, but also in case anyone here was interested in this themselves!
Also, I have to say, I literally laughed out loud when I saw the name of this blog! I thought, yep! This one will be a good recipe for us, because dinner certainly feels like a zoo around here with three active little boys haha!
Ingredients:
- 4 chicken breasts boneless, skinless (I think chicken thighs would also work well here! I also cut my chicken breasts in half so they would be a little smaller.)
- 8 slices bacon (a thin cut)
- 1/4 cup brown sugar (I think you could completely leave this out if you wanted to, especially if you are doing a Whole30! I just sprinkled a little spoonful into my mix, but did not use the full 1/4 cup.)
- 2 teaspoons smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon chopped parsley (I used my dry seasoning and it worked out just fine, I’m sure fresh parsley would be even better though!)
What to do:
- Rinse your chicken, cut breasts in half and place in an oven safe dish.
- Mix your seasonings together.
- Sprinkle half on top of your chicken breasts.
- Wrap your chicken in 1-2 slices of bacon. (Jacob said definitely two slices, because the more bacon the better haha!)
- Sprinkle the remaining half of the seasoning mix on top of the chicken.
- Place in the oven, cook at 375 degrees for 25-30 minutes. If you want your bacon crispier, you could broil it for a minute or two.
- The original recipe has you sprinkling the parsley on the top of the chicken once it has been baked, but I mixed mine in with the original mix and it was fine that was too!
I served our chicken with a cesar salad and some leftover mashed sweet potatoes that I reheated in the skillet in some coconut oil. This is a great trick for leftover potatoes, espcially if they have dried out a bit! I let mine sit in the pan spread out like a big pancake for the bottom to get a little crispy!
