I feel like lunch can be one of the stickier situations on a Whole30, a lot of time during the day I am grabbing things because I am so busy with the boys, and that is much more challenging to do when you are trying to be more mindful of your food choices!
I thought this would be a handy post to do, I will add to this as we go along during our 5th round, but hopefully it will be beneficial for anyone looking for some simple lunch ideas!
Lunch Ideas:
- Leftovers – We have leftovers most days because I definitely want to make sure we eat what I am cooking, but it’s also easy and one less mess to think about!
- Chicken Salad – This is an easy one to make a big batch of during the week. We enjoy this just by itself, with plantain chips, or in a lettuce wrap!
- Taco Bowls – When I make this for dinner, I always do extra meat so we can have some for lunches during the week. I love to just fry up a plantain in coconut oil, reheat the taco meat with some salsa, make some quick guacamole (avocado, lime juice and garlic salt) cut up a bell pepper and just scoop everything and go. One delicious lunch right here!
- Salad – Use leftover meat from dinner or chicken apple sausage, lettuce, spinach, avocado, tomato, boiled egg, bacon, cucumbers, raisins, cranberries (if you can find them sugar free), nuts… possibilities are endless! Tessamae and Primal Kitchen make a number of Whole30 approved dressings that make salads an easy go to! Before, I would just use olive oil, garlic salt or sea salt and pepper with some lemon juice maybe. There are plenty of make your own recipes too, but I don’t really care enough right now to take the time to make them haha…
- Toddler Plate – Sometimes I just grab random things out of the fridge… avocado, boiled egg, cook some chicken apple sausage, nuts, side of fruit or veggie…
- Lettuce Wrap Sandwiches – Another easy lunch, we love Applegate lunch meat and their salami, Primal Kitchen makes a great mayo, and you can find a dijon mustard too that would be Whole30 approved. Add whatever veggies you want! (And yes, that is a fake snake at the bottom of my picture, do not worry haha!)
- Hotdogs grilled on a skillet! – This is such an easy lunch as well, Applegate hotdogs cut open and heated on the stove for a few minutes. Add a side salad, fruit, plantain chips and salsa and you’re good to go!
- Tuna Salad with Plantain Chips is another go to of mine! Safe Catch is my favorite brand, but there are other quality brands you could choose as well. I like to add a chopped boiled egg (without the yolk), pickles, mayonnaise, dijon mustard, salt and pepper. You could eat this alone, or in a lettuce wrap or on bellpepper cups!
