This stir fry has become one of my favorite things to make lately. I know a lot of my friends follow Jess Parimore on instagram, but in case you don’t, she is amazing fitness coach and posts a lot of great information about health and exercising, and also shares some recipe ideas here and there. I have been making her stir fry so much that I thought it would be helpful to make a post about it, I actually reached out to her to make sure that was ok and she said sure haha!
This is one of those kinds of recipes where you can add pretty much whatever you are in the mood for and it would work. You can check out the combination I use below! I love this meal though because it is packed with veggies, easy to make and good leftover.
Start by chopping your veggies while browning ground turkey in a separate pan. I like to use green and red bellpeppers, yellow onion and broccoli.
Transfer your chopped veggies to a pan with a little olive oil and let those cook.
Add a package of frozen cauliflower rice. The first time I made this I used the package below, but now I just use straight cauliflower rice. I also like to add frozen peas and carrots to the mix. Heat until everything is cooked through.
Before I combine the ground turkey and cooked veggies, I add the Hoisin sauce to the ground turkey and coat it. Then I combine the ground turkey and cooked veggies, and add some coconut aminos. Occasionally, I might some fish oil or sesame oil, but I really like it with just the coconut aminos and hoisin sauce. I don’t measure, I just add until everything is coated or smells right.
I scramble 2-3 eggs and add those to the mix, toss it around and then you’re done!
We love to heat up frozen wontons to go with this! Not exactly the cleanest food, but it’s a tasty side to go along with it!
