haha it’s safe to say that I’m always on the lookout for a different way to incorporate fish into our diets! It’s so good for you, so many health benefits, and it just tastes good!
I’m sitting here thinking that I also love eating tuna fish salad for lunch with Vann’s crackers and also reminiscing about how when I was growing up, my Maw-Maw would sometimes get us these huge fried catfish boxes from this little place called Hush Puppy in town. Had the best hush puppies, and those boxes were loaded down with fries and coleslaw too!
So when Ashley told me about these Fish Taco Bowls, I knew it needed to be a recipe highlight here.
I did a few things differently from the recipe, like using a packaged power slaw (see below) instead of making my own, and also used a different coconut jasmine rice recipe for rice!
For the coconut rice you see buried in the picture above…
- 1 cup Jasmine rice (I used regular rice at this point bc of COVID grocery selection going on haha…)
- 1 can coconut milk
- 1/3 cup water
- 1 tbs olive oil
- sea salt
- Bring water, coconut milk and olive oil to a boil
- Add in rice and salt
- Stir for a minute
- Cover and let simmer for about 18 minutes
- Remove from heat and let sit another 5 minutes
- Keep lid closed during the cooking process and stir at the end!
For the fish, the recipe says to use…
- 1 pound cod fish
- olive oil for drizzling
- kosher salt and pepper
- 1/2 teaspoon red pepper flakes
- 1 lime
- 1 orange
You can grill this on your grill but I just cooked it on my stove top in a pan because it was a week night and Jacob was still working! 😉
When assembling your bowls, just add rice, top with the fish and then top with your slaw. We also sliced avocados and made pico de gallo to go on top! Hope you enjoy this easy and flavorful dish!
